Dr. Rupali Shinde (Rokade)(Ph.D., Foods & Nutrition) is an Assistant Professor in the School of Sciences at Pimpri Chinchwad University, Pune. Her research focuses on functional snack formulation and the nutritional impact on blood glucose and lipid profiles; she has extensive experience in clinical nutrition, food safety, and food processing. She has received JRF fellowships, qualified UGC-NET, and published multiple peer-reviewed papers in food science and nutrition.

About Me

I am Assistant Professor in the Department of Nutrition and Dietetics at Pimpri Chinchwad University, with M.Sc. and Ph.D. degrees in Foods & Nutrition. My academic journey has been driven by a passion for understanding nutrition science, clinical practice, and food safety.

My area of expertise includes Food Science and Nutrition, Nutrition and Dietetics, Clinical Nutrition, Food Processing, and Food Safety and Quality Control. I have conducted extensive research on functional food formulation and its effects on metabolic health, particularly in diabetes and dyslipidemia management.

I am committed to fostering a collaborative learning environment where students develop critical thinking skills and evidence-based nutrition practice. Beyond teaching, I actively engage in community health initiatives, industry collaborations, and interdisciplinary research.
